how I cooked a turban squash

I was walking through our local grocery store and was ready to grab some fennel and I was taken by surprise by the most odd vegetable I had ever seen. Thankfully it had a sticker on it to let me know what it was. It was a turban squash.

It reminded my of the little creature from the super mario bros. game. 

I read online that some people use it as decoration for the table during special dinners. They cut the smaller part off and roast the bigger part and then scoop out the squash and make a mashed squashed but then use the leftover part as a bowl. I decided to just roast it like I do butternut squash.

Such an unusual shape.

The seeds were bigger than the seeds from other winter squashes. I read that some people roast the seeds.

There was not much left to the smaller part after gutting out the seeds and moosh so I just threw it away. There was plenty left after I gutted out the top part. I used a vegetable peeler to peel off the skin.

I cut up the squash used a marinade to get them nice and tasty. I put them in the fridge for about 2 hours to let the marinade soak in.

I wish I would have cut the slices a little thinner.

All in all the squash was not bad. I am not sure I would get it again just because it wasn’t better than my favorite butternut squash.
