Cranberry Goat Cheese Chicken

I recently purchased the newest Biggest Loser Quick and Easy Cookbook because they advertised that they were easy and quick recipes. As I have said before I am not a chef but I like preparing good food. I really like this cookbook because it is full of advice on buying natural foods and the recipes are usually 7 ingredients or less. Perfect for throwing together something after getting home from work.

What you will need:

4 (4-ounce) skinless chicken breast
Kosher salt, to taste
Black pepper, to taste
4 tablespoon cranberry sauce
2 ounces (about 1/2 cup) goat cheese crumbles
1/2 teaspoon dried rosemary leaves, or to taste

First they suggest you flattened your chicken but I just cut the chicken breasts in the middle to split them. You will want to put some salt and pepper to flavor the chicken.

Sauté chicken
Saute the chicken by putting the stove on medium and cooking each side of the chicken for about 2 minutes, just until they are golden brown on each side.

Chicken in the oven
Then you will put a tablespoon of cranberry sauce on each chicken breast (I had extra chicken that I will put in fridge for lunch tomorrow) and sprinkle 1/4 of the goat cheese and 1/4 of the rosemary leaves.

Dinner is done
I made some brown rice and steamed mixed veggies for a complete meal. I tell you what, this meal was delicious. I will definitely be making this more often.
