Tried a new veggie dish in hopes to find more meals that my wife and I can share. My wife is not a strict vegetarian but does try to stay away from meat. She will eat fish and has the occasional chicken (if I make a good tasting meal). I have a new source for my recipes. I downloaded the SparkRecipe app for my iPad. I have browsed through and picked out a few recipes I want to try so stay tuned as I will be adding more recipe posts.
Here is what you will need:
12 ounces whole wheat penne pasta
1 tbsp olive oil
1 medium onion diced (about 1 cup)
2 garlic cloves, minced
1 1/2 cups of pear or cherry tomatoes
3/2 cup fat-free, less-sodium chicken broth
1 (6-ounce) package of baby spinach
1/4 tsp salt
1/4 tsp pepper
1/2 cup crumbled reduced fat feta cheese
Here is what you will do with all that:
1. Cook pasta according to package directions, omitting salt and fat.
2. Meanwhile, warm the olive oil in a large nonstick skillet over medium heat. Add onion and cook, stirring, about 4 minutes. Add garlic and cook, stirring, about 30 seconds. Add tomatoes and broth; bring to a simmer, and cook 5 minutes or until the tomatoes soften and some liquid evaporates. Use a wooden spoon to lightly crush tomatoes.
Slowly stir in spinach or arugula; cook, stirring, 2 minutes, or until leaves wilt.
3. Drain pasta. In serving bowl, toss pasta with warm tomato-spinach sauce. Season with salt and pepper. Garnish with cheese.
Although the meal was tasty it was not what I expected. I did not realize it would be so runny or soupy. I would not say it is one of my favorite pasta dishes I have ever tried. My wife enjoyed and even had it for lunch the next day.

I guess I could have used less broth so it was not so soupy but it was my first time and I just followed the recipe. If you have any suggestions let me know in the comments.
