Stuffed Bell Peppers

While surfing around looking at recipes (as I have said before, I am not a chef and I do not make up my own recipes but I do like to cook) I found this recipe at I always wanted to try a stuffed bell pepper dish and being that these were vegetarian style my wife would be able to enjoy them as well.

Here is what I used:
6 large bell peppers (red, orange, yellow)
1 tablespoon of olive oil
1.5 cups of Instant Rice
1 can (15 oz) pinto beans, drained and rinsed
1 zucchini, washed and diced
1 yellow squash, washed and diced
1 red onion, diced
3 cloves of garlic, minced
1/2 cup shredded carrots
1 Jalepeno pepper, rinsed, seeded, and diced

This is what I did:

I rinsed and dried the bell peppers and then cut the tops off and took out all the seeds and white stuff (whatever its called) from inside so all that is left is the pretty colors.

Next I filled a pot about 3/4 full of water and placed the peppers and the tops in the water. Put the pot on high heat and let the water start to boil for about 3 to 4 minutes.

Meanwhile I cooked my rice. I am sure that instant brown rice is not as good as regular brown rice but sometimes I just need instant.

After the bell peppers have been in the boiling water for 3 to 4 minutes I took them out and put them in a baking dish just big enough for them to stand up next to each other and have the tops in there with them as well.

In a sauce pan, saute the garlic, onion, zucchini, yellow squash, jalapeno pepper, carrots, and olive oil on medium-high heat. I did this for about 8 minutes to let the ingredients get tender. Then I added the beans and stirred.

When everything was done cooking I put about 1/4 cup of brown rice in each bell pepper and then veggie mix. It is hard to say how much per pepper since the size of each pepper was different. I just sort of tried to divide it up evenly.

Then I topped each pepper with some Weight Watchers shredded Cheese (about 1/8 cup per pepper).

I put them in a preheated oven 400 degrees for about 15-20 minutes.
MMMMMM- cheeeeeeeese!

I cut them in half to make it a little easier to eat. These turned out pretty good.
