how to cut up a whole chicken

I met up with my chef friend to discuss a future project that he and I will be working on. I am very excited about this project as it will allow him to do what he loves to do (cooking and teaching how to cook) and what I love to do (filming and producing videos). I am guessing you can figure out the jist of our project…more on that another day.

Well of course when you meet with an executive chef to discuss a project he will be involved in and he invites you over for him to cook you would be crazy to say no. My wife and I were ready the moment he said, “How about I just cook…). He was going to cook us up some chicken and as he pulled the whole chicken out of the package he suggested that I grab my iPhone and do a test recording…so I did.

You will have to forgive the laughter and wonderment of the child in the background, that is my adorable god-son. I wish we lived closer so he and my grandson could play more.

In helping my wife and I stay paleo he cooked us up a delicious yet simple chicken with a squash hash and brussell sprouts and bacon. I of course prepared something as well. I started us all of with bacon wrapped shrimp. An evening with good friends, the birth of a new project, and bacon…why would you ask for more.

digging up roots

I wast able to work on my yard a little bit the other day. A friend of mine let me borrow some contraption that helps pull out roots. I still have to do some digging but it was handy to have to do some of the heavy pulling.

The temperatures got up into the triple digits so after about 3 hours I had to call it quits.

I tried throwing some ingredients together to see if I could create my own recipe and now that I am sitting here typing I can’t remember all the ingredients. Not a good plan if the meal turned out to be amazing. But, it was just ok.

That evening I made some flank steak using a marinade recipe I found online. The recipe called for using the marinade as a sauce with some mushrooms. I know this sounds goofy, but I can’t remember the site. Sorry, I should give it credit because the steak turned out delicious. I remember using coconut aminos. Now I feel like a nerd because I just remembered I have some more flank steak in the fridge and I would like to cook it the same way.

If there is one piece of advice I would give people trying to change their eating style it would to plan your meals out. This ritual has been very helpful with keeping me on track. Even though a lot of my meals are getting repetitive it helps knowing me not stray from healthy eating.

You want your baked sweet potato fries to taste out of this world? Then use bacon grease…yes sir! I get my bacon from US Wellness Meats so it is MSG, Nitrate, Sugar free (and Whole30 approved) so it is all good. After cooking my bacon I use a little strainer and pour the juicy goodness in to a tupperware cup and put it in the fridge. Then When I make my baked sweet potato fries I melt the bacon grease in the microwave and then pour it all over my fries. Sooo gooood.

My delicious, gross-looking, mistake of a dinner

I found a recipe using the iPad SparkPeople app a recipe submitted by SparkPeople user 2BHOTT. The recipe is called Crispy Ranch Chicken. In the morning I grabbed a bag out of the freezer to have the chicken thaw while I was at work. Well guess what, it wasn’t chicken, it was turkey cutlets. I figured oh well, it should turn out ok. 

What was I thinking?

So I started to get all the ingredients ready and quickly read thought the directions. What I didn’t pay attention to was a certain preparation step. You see, I was supposed to mix all the fry ingredients together and then dip the chicken (or in my case, the turkey) in the eggs and then mix it with the dry Ingredients. BUT, I mixed all the ingredients and so I had a glob of Rice Crispies and eggs.

I was so frustrated…I just threw all the turkey into the bowl with the mix and started to stir and then tossed them on the baking sheet. As you can see it doesn’t look all that appetizing. 

Crispy Ranch Turkey

It looks like one of my pugs puked all over the turkey. 

After taking it out of the oven I took a bite and to my delight, it tasted good. So I added my baked sweet potato and green beans and enjoy my dinner. 

I plan to remake this recipe and do it the right way. I’ll post on that event as well. 

Here is what you’ll need:
    4 boneless skinless chicken breasts
    1 oz pkg ranch dressing mix
    2 cups crispy rice cereal
    1/4 cup grated parmesan cheese
    2 egg whites (beaten)
    2 tablespoons light butter (optional)

 

Here’s what you’ll do:

Mix rice cereal, ranch mix and parmesan cheese together in bowl. Dip chicken in egg whites, then in the cereal mixture to coat evenly. Arrange chicken on greased baking sheet. Bake until golden. 30 to 35 minutes.

Some Cheeeeezy Enchiladas

Just about everyone I know loves Mexican food but it can be with cheese being one of the key ingredients in most recipes it can prove difficult to satisfy the hunger for good Mexican food. I found this very easy recipe to make some low calorie enchiladas that have chicken and plenty of cheezy flavor.

Ingredients
1 spray(s) cooking spray
8 oz Kraft Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product
1/2 cup(s) fat-free sour cream
1/4 cup(s) fat-free evaporated milk
1/4 cup(s) scallion(s), green part only, minced
1/4 tsp crushed red pepper flakes
3 cup(s) (chopped) Chicken breast without skin, roasted, chopped*
6 medium whole wheat tortilla(s), 7-inches each
1/4 cup(s) low-fat shredded cheddar cheese, sharp variety
6 medium olive(s), green, pitted, sliced
1/4 cup(s) salsa

Preheat oven to 350ºF. Coat a 9-inch glass baking dish with cooking spray.

For the chicken you could buy the premade chicken packages and that will save you time but to really get the juicy tender chicken it is best to be raw chicken. You salt and pepper the chicken and then sear each side for about 4 – 5 minutes and then bake in the oven at 350ºF for 10 – 12 minutes or until the chicken is completely cooked.

In a microwave-safe bowl, combine cheese product and sour cream; cover and microwave on high power until cheese melts, about 1 1/2 to 2 minutes.

Remove half of melted cheese to a small bowl and stir in evaporated milk; set aside. Add scallions, red pepper flakes and chicken to remaining cheese mixture; stir to coat.

Spoon about 2/3 cup of chicken mixture down center of each tortilla

fold in sides of tortilla to cover filling and place tortillas in a single layer in prepared dish; spoon remaining cheese sauce over top and then sprinkle with shredded cheddar cheese and olives.

Bake until cheese topping is bubbly, about 20 to 25 minutes.

Serve with salsa. Yields 1 enchilada per serving. Points Plus Value: 8 per serving.

Things are looking a bit fishy

In my quest to eat healthier I have decided to add more fish to my diet. This is going to be a challenge because I am not a big seafood eater. My wife suggested that I try salmon because she never thought it tasted fishy. So I did a search on WeightWatchers and found a few recipes. This is one of them.

Honey-Mustard Roasted Salmon

HMSalmon - 1
Season both sides of salmon with salt and pepper; place salmon in prepared baking dish.

HMSalmon - 2
In a small bowl, whisk together Dijon mustard, honey, water, vinegar, dry mustard and garlic powder. Remove 2 tablespoons of mustard sauce and brush over salmon fillets. Stir dill into remaining mustard sauce and set aside.

HMSalmon - 3
Roast until salmon is fork-tender, about 15 minutes.

Serve salmon with reserved mustard sauce spooned over top. I added whole grain brown rice. It was a delicious recipe and one that I will add to my recipe box.

Tarragon Chicken – simple and good

Tonight I tried a new recipe form the Cooking Light, 5 ingredients, 15 minutes recipes book. It was fairly easy to make, as it should with only 5 ingredients, and was pretty good. It did have quite a lemon taste to it and I probably should have smashed the chicken a little more. To compliment the chicken I made some brown rice. Well, actually I microwaved some Birds eye microwave brown rice in a bag. I also microwaved a packet of Green Giant’s Broccoli and Cheese. I know that is a lot of microwaving but it really helps with the convenient factor.

4 (6-ounce) skinless chicken breast halves
1/4 teaspoon salt
2 tablespoons extra-virgin olive oil
1 teaspoon grated lemon rind
2 tablespoons fresh lemon juice
1 garlic clove, minced
2 teaspoons minced fresh tarragon
1/8 teaspoon salt
